I am trying to create a symbol
for the AD736 RMS detector, but I am having no success either
creating a new symbol or modifying an existing one (NE555). I
created a library 'RMS detector', but I am told that it is not
writeable, so I can't create or modify a symbol.

Which version of KiCad are you using?? Also, is this on Windows, Linux, or Mac?
I am using Linux, and by default KiCad saves to ~/.local/kicad/7.0, but I can specify a different path if I prefer.

KiCad 6.0 on Windows 10. I
didn't specify a path for saving, I just added the new Library
to the Library folder.

I just tried this on a Win11 virtual machine with KiCad 6.0.11.? In the symbol editor I clicked "New Library" and it defaulted to creating "RMS detector" in C:\Users\sfalco\Documents\KiCad\6.0\symbols which is writable.? If you are trying to add a library to the system library folder, that might not be writable, but I don't see why KiCad would default to that.
Do you get the option to select where to put the library?

writing to app folders in Program files, but of course that's
not guaranteed, and in any case is dangerous. But it's odd
that I can create a library but not write to it!

Yes - that doesn't make a lot of sense. As soon as you click "New Library" in the symbol editor, you should get a dialog to save it, and that dialog should show the path. I'll try to attach a screen shot of what you should see, but I don't know if groups.io allows attachments. We'll see.

its sub-folders are empty.? I downloaded the Schematic Editor
6.0 English Documentation KiCad.htm,
but I didn't find any mention of a KiCad folder being in
Documents.? I may have missed a reference.

One other point - if you create a new library from within the schematic editor, it will give you a choice of "Global" or "Project". If you choose "Global" it should again put the library into a path like what I showed. If you choose "Project" it will put it into the folder of whatever project you have open.
As a demo, I created a project called "test" and I told KiCad to put the project into C:\Users\sfalco\Documents\KiCad\6.0\projects\test. I then created a symbol library called "try" owned by the project, rather than being global. As you can see in the attached Windows File Explorer screenshot, file "try.kicad_sym" was created in the "test" folder (circled in red).

got that far, but I'm still in deep trouble.If I try to make a
new symbol, I get? 'AD736' superimposed on 'U' in large
immovable letters, right where I want to put the rectangle to
build the symbol round. If I try to modify the NE555 symbol
instead, changing the name to AD736, the symbol is
uneditable.? I seem to be balked at every junction.

One thing that might cause that is the "snap grid". I.e. if you have a very large grid set, then you won't be able to move things in small increments. But it is definitely easy to move everything. Here is a continuation of my example. I created a symbol "jjj" within the "try" library, selected and moved the jjj lettering.

Not quite out of the wood,
though. I couldn't get the pin names to appear inside the
symbol, even though I checked carefully that the option was
ticked. I've overcome the problem by deleting the pin names,
but I would like to solve the issue rather than work around
it.
Also, I see that 'native' KiCad symbols have a
yellow fill in the rectangle, but I don't see any option to fill
my symbol's rectangle.

The circle goes to the outside of the box. So for pins on the left side of the box, set the orientation to "right". That is not intuitive to me but that's how it works. Select the outline and right-click. You should get a "Rect Drawing Properties" dialog, and you can then select the "Fill Style". Steve
