Keeping to the letter of the licence, then every time you cross you should
use the 'proper' call for the country that you are in (or Principality, but
let's not get that deep here - HI!).
Like on voice, having to change each time from GW to G and back again.
In reality, who's going to bother you about it? Only other Amateurs, to
whom it gives something to talk/argue about. :-)
Like some motoring offences, unless you are 'done' for something else as
well, I doubt if the RA are going to patrol the Scottish and Welsh borders
looking for errant UI-View/APRS users. ;-)

Being someone that lives within one or two miles of the border and crosses
over and back many times a day, if I had to change my call on the radio
each time that would be the last time I would use APRS mobile I think.
The fact that I am sending my location every time I transmit I think is OK.
but it would be nice to have some clarification.
