The idea is to use two SPDT toggle switches instead of the rotary encoder and emulating the behaviour, the signals is described here: or here
You will get the feel for the pattern you need to make with the switches after some practice (: Make sure to mount them on a small plate to make it easier to switch them as you will need to do this many times.
