I personally think plain-text files are a PITA. Word as well as Pages (I think? I'm almost sure - haven't used it in awhile) will allow you, when saving a file, to "save as" various formats, including pdf. I see no reason not to use a pdf file most or all of the time, simply because they're very readable.?
