Southern Lady Cream Peas & Bacon


 

  • Lady Cream Peas & Bacon
  • How to cook fresh Lady Cream Peas seasoned with onions, garlic, bacon, salt & peppers and bouillon. Serve with Hot Water Cornbread on the side.

Ingredients

  • 1 - pound fresh shelled lady cream peas
  • 4 - slices of bacon, chopped
  • 1 - small - medium size onion, chopped
  • 1 - clove garlic, minced
  • water (enough to cover peas)
  • salt & pepper to taste
  • 1 - chicken bouillon cube

Instructions

  1. Rinse the fresh peas under cold water and drain.
  2. In a large skillet add the bacon, onion and garlic. Saute until the bacon starts to render some fat and the onions are translucent in color (do not drain the bacon grease).
  3. Add the peas and cover with water to at least a 1/2 inch above the peas. Add salt, pepper and a one chicken bouillon cube.
  4. Bring the peas to a boil (skimming off any foam that forms), then reduce heat and simmer until the peas are tender but still just a bit firm (about a hour to a hour and a half).
  5. When the peas are done place in a serving bowl and add additional salt and pepper if needed.
