Yes, I have already used that process but am wondering why the text
color can't be changed all at once just like the track color. It would
be much faster for sure. Can that feature be added?

The default text colour works for new text items added to the layout editor rather than converting existing items.
To change existing items, right click on the text and either go to "Properties" and you can change the text properties for there. Or if you right click on the text you can select "Edit Font" followed by "Font Color"
