Good point that Ron made there, never trust what some one else has added on! Always look and check for yourself (or get a qualified service person to do it for you). The front socket was a standard Hammond fitting for headphones, it may have been altered, although probably not. Signal level from the headphone socket with no load (just an empty jack plug, no 'phones) would be about the same as speaker level, say 1 to 10 volts depending on how the organ was being played. If you take the back off the organ you should see the wiring from the headphone socket going to the crossover tag strip, between and just below the two speakers. At the same time you could take the opportunity to trace the wiring from the other socket, most likely it will go to the speakers through one or more resistors (line out), or to link into one of the screened leads connected to the amp PCB under the Leslie (line in?). Any other routing may mean it's used for some oddball purpose, caution is advised!
