If I was doing this for myself like you are I would use PL premium and make a sandwich. If you are glueing the cherry together a couple of lines of PL with a little space to hold each hemlock board. Once cured its been my experience the PL won't let anything get out of hand.

First question I would ask is it going into a house with a large humidity?shift during the year. Also are you going for a complete rustic look with gaps or a refined look.

so two big panels of opposing movement horizontal?
probably 10 mm max and 8 mm with vertical hemlock.?
so the question is how to attach ?I am not a posed to sliding dovetails , flexible adhesive??
