They work fine on pavement but you have to make sure there isn't any gravel--otherwise they'll chip/crack. I've stacked 'em five high on asphalt quite a few times.

My 2001 EVC is definitely not on the level - it is lower in front than
in rear. I did level it and installed a pair of Hoppy levels - one on
the dash and one on the driver door... Very useful.

I agree that it would be nice to be able to level the fridge
independent of the van, however, leveling the van has the added
benefit of providing a level bed...

I've had pretty good luck with those plastic orange leveling blocks.
Got two sets of 10 at Camping World. I've broken two, but they
replace them at no charge. I don't recommend using them directly on
asphalt or cement. For off-pavement camping they're great. For
pavement, they probably need something to pad them underneath to
prevent cracking under stress.
