The problem is your first or second gen ipad.

The DX is fine.? The interface is fine.? Your iPad doesn’t have the smarts to deal with BT and MIDI and if it’s 1st gen, as was mine, the opsys can’t be updated far enough.

I know this because I went through the same thing a year or two back.? iPad running Korg suite.

Was stuck running the midi-to-30pin adapter.

It was my wife’s “old iPad” so I put it to good use.? But the gig wasn’t enough to shell out the clams for a newer one.

Thanks to everyone for the assistance.? The midi adapter actually has markings on it reading on one, IN and the other OUT. ?? I will continue to try your suggestions.? And yes, there is a Yamaha app?
that you can download onto the Ipad which gives some great sounding piano sounds. ? That is what I'm trying to accomplish.? Again, thanks for the help.?

The setup video on the yamaha site doesn't really indicate which plug goes in which socket - hopefully that is evident from the way the loop of wire is between them,unless they are marked.
I doubt you should need an app to connect bluetooth - that's in SETTINGS on the ipad,and Yamaha are referring to something called PIANO DIARY which I presume is a music app,and to select the comms device within its settings.

To edit the sound parameters on the DX7 would need some sort of SYSx dumping software on the IPad and the instructions Grant just provided.

But from a first check, the DX21 firmware and that of the DX100 are
completely different. In the DX100 the rom starts with code and ends
with the voices, in the DX21 it's the other way round. Also the DX100
uses only 43 bytes per voice, so no simple direct comparison between
those two. And that although they use the same MPU (HD63B03XP in DX21
and HD6303XP in DX27S),only difference is the speed of the processors.

Okay, now I have a reason to desolder the rom from my DX27s and read
that out... Unless someone has the firmware of the DX27s?
