I have the same concerns about softened water, but lore (on this list)
has it that ion exchangers are exactly what they used on PCB washing
lines. Apparently a number of ion exchangers were put in series, with
the freshest nearest the DUT and rotated through in turn.

Those ion exchangers definitely use conductivity to measure their
output hardness, so maybe our understanding is not complete?
After all sodium ions should also conduct?

I can tap into the softened water at work (before minerals are mixed
in again), is there any test one could use other than conductivity to
determine if a particular water is suitable for PCB washing?

Please note that water that has been through a domestic water softener does not qualify as that merely swaps sodium for the calcium, magnesium etc that causes hardness, but doesn't reduce the quantity of dissolved salts. Naturally soft water with a very low total dissolved solids is good.
