I don't think I want to leave the pump in place. There's got to be some loss of
power and could I run it dry? Plus I've already set the old PS pump aside for
another list member with PS on their van. I like Ron's idea of the shorter
belt, if I can find one.

You could just leave the PS pump in place (funtioning as an idler
pulley).

I've heard that running the power steering pump with no fluid will cause it
to self destruct. I'm thinking that one may wish to loop the output of the
pump to the input, and circulate fluid to keep the pump happy. Any thoughts?
