Pimoroni in the UK has RPI5s - 8GB and 4GB - in stock as well as an NVME SSD bottom hat they have developed.
I just received the 8GB RPi5 and the bottom hat last week.

Sorry I just noticed the 2.5mm jack (can also use USB-C) looks like it can take up to 16vdc. Now that solves your problem and offers a fail safe too!!

I personally use a UPS for my Raspberry Pi 4 with 12 x 18650 batteries which gives me about 16 hours or more “load depending” of runtime.
