I think there are both practical and interets/rarity reasons for preferring the 351-M.
The practical reason is that the modified sets have wider audio bandwidth through the BID 300 socket - sufficient for 9600 baud packet and other wide data modes.
The interest reason is because they were designed as a portable alternative to the RT353/DMU secure speech combination used in landrovers, for the Royal Marines primarily. As such they are rarer and have associations with a particular unit.
Whether the modification/refurbishment to make a 351 into a 351M makes them younger sets or reduces their reliability I'm not sure - my only in-service failure of a 351 since I got my sets was a 351M so far.
