Unfortunately, it doesn't make sense for my use case (which is why I'm mostly still on Buster). I've got a unit that stays in my Jeep and does a lot of things..ACARS decoding, ADS-B, P25 Scanner, and all of the ham radio things as well. I have an old Android phone that is my scanner display and interface (which connects to the Pi Hotspot) but when I need to do updates or interface with the internet, I turn on my real phone Hotspot and the Pi automatically switches to the network as needed. it's been doing that for 4 or 5 years now and I'd like for it to keep doing that.?

yep. it makes sense to just plug it into a wired network when you got back home, to do updates and stuff.
that way your wireless setup never gets touched.

I have set it up so that it would be just like a Wi-Fi router that you would purchase at a box store. I wanted it to be updated through ethernet when I come back from the field/POTA. Running updates through ethernet will be faster.

If you want it to be a Wi-Fi access point but also a client at the same time, I would recommend to get an external USB Wi-Fi adapter and use that for client access.
