On the Healing Cancer Naturally site there is a FAQ for Budwig and I found a couple of references re: cottagge cheese:
Question 125: Should I buy low-fat quark or quark with 20 or 40% fat content?
Answer:
Only quark [cottage cheese] with as little fat as possible (under 1%) is optimum. The importance of the quark [cottage cheese] lies in its sulfurated amino acids. The higher the fat content of quark/cottage cheese, the lower the amount of amino acids it contains. Question 59: Which is best to use with the flaxseed oil ¡ª low-fat or fat-free cottage cheese? Or does it not make a difference?
Answer:
Either low-fat or fat-free cottage cheese is ok. Rather than spending a lot of time finding fat-free cottage cheese, I would spend the time in looking for good quality such as no additives, organic and - if you can find it - cottage cheese from unpasteurized milk
They don't give a source, but ofter refer to Lothar Herneise who apparently worked hand in hand with Dr B.

Hi James,
I'm sorry about my delay in answering. I was away from my computer for much of the day.
Most people following Dr. Budwig's diet use low-fat cottage cheese. If anyone stopped cancer by using no-fat cottage cheese or Greek yogurt, I don't recall that happening.
Dr. Budwig used Quark in her recipe, but she did say that cottage cheese was okay too. She said nothing about no-fat cc or Greek yogurt.
If anyone reading this can add some helpful information, please do; however, any comment should have some worthwhile evidence.
Kind regards,
Sandra
