Prep Time25minutes mins Cook Time2hours hrs 25minutes mins Soaking Time:1hour hr Total Time3hours hrs 50minutes mins Course: Main Course Cuisine: American Keyword: kansas City, ribs ¿ªÔÆÌåÓýs: 6 servings Author: Lori Lange Ingredients RIBS: 4 to 5 pounds pork loin back ribs RUB: 1 tablespoon packed brown sugar 1 tablespoon paprika 1 teaspoon garlic powder 1 teaspoon celery salt ? teaspoon dry mustard ? teaspoon black pepper ? teaspoon cayenne pepper SAUCE: ? cup finely chopped onion 2 medium garlic cloves, minced 1 tablespoon butter 1 cup ketchup ? cup molasses ? cup cider vinegar ? cup water 2 tablespoons brown sugar 1 tablespoon chili powder 1 tablespoon yellow mustard 1 tablespoon Worcestershire sauce ? teaspoon salt CHIPS: 2 cups hickory chips, optional (soaked in water for at least 1 hour, then drained) Instructions Preheat the oven to 350¨H. Trim the fat from the ribs; remove the membrane (see tips below). Place the ribs in a shallow roasting pan. In a small bowl, stir together the rub ingredients. Sprinkle the rub evenly over both sides of the ribs; rub in with your fingers. Cover the pan with foil. Bake the ribs for 2 to 2? hours or until very tender. Carefully drain off the fat in the roasting pan. For the sauce, combine the onion, garlic and butter in a saucepan and cook over medium-heat until tender. Stir in the remaining sauce ingredients, and bring to a boil. Reduce heat, and simmer for 20 to 25 minutes or until desired consistency. For a charcoal grill: sprinkle the wood chips (if using) over medium coals. Grill the ribs on the rack of a covered grill directly over the coals for 10 to 15 minutes or until the ribs are browned, turning once halfway through grilling and brushing occasionally with sauce. For a gas grill: preheat the grill. Reduce heat to medium. Add wood chips (if using) according to manufacturer's directions. Place the ribs on the grill rack over heat. Cover; grill for 10 to 15 minutes or until the ribs are browned, turning once halfway through grilling and brushing occasionally with sauce. Serve the ribs with the remaining sauce. Notes To remove the membrane that covers the bones: slip a dull knife or the pointed end of a meat thermometer under the membrane. This prevents the ribs from curling as they cook and helps the pork to get tender. In a small bowl, combine the rub ingredients. Rub all sides of the ribs with rub mixture. Place the ribs in a large plastic zip bag and refrigerate overnight. In a small bowl, combine the barbecue sauce and apple butter; set aside. Cut the ribs into 2-rib portions to fit inside the slow cooker. Cover and cook on low for 4 to 6 hours (or until ribs are 170¨H and test tender with a knife easily piercing into the meat). Remove the ribs from the slow cooker to a board, and drain off any liquid from the slow cooker. Wipe the slow cooker dry. Place the ribs back into the slow cooker. Pour about ? cup of the sauce over the ribs. Cover and cook on high about 30 minutes or until glazed. Serve with remaining sauce (warmed), as desired. Rinse, half and pit all of the peaches. Coat each half with 1 tablespoons of brown sugar. Allow the peaches to sit at room temperature for 30 minutes or until the brown sugar has dissolved. Place the cut side of the peaches down on a hot grill (in direct heat) for 5 - 10 minutes or until a bit of char has appeared. Honey Lime Grilled Chicken Honey Lime Grilled Chicken: Chicken breasts marinated in lime juice, lime zest, honey, garlic, seasonings and teriyaki sauce. Prep time: 15 MinCook time: 12 MinInactive time: 12 HourTotal time: 12 H & 27 M Ingredients 4 - (4 ounce) boneless, skinless chicken breast halves 1/2 -cup honey 1/3 - cup soy sauce 1/4 - cup lime juice (about 4 limes), reserve lime skins 2 - garlic cloves 2 - teaspoons lime zest 1 - teaspoon Simply Asia sweet ginger-garlic seasoning or similar 1/2 - cup Mr. Yoshidas Gourmet Sweet & Savory Sauce or you can use teriyaki sauce or pineapple juice Instructions In a resalable gallon size zip lock bag, combine the honey, soy sauce, lime juice, lime zest, garlic, ginger garlic seasoning, and Mr. Yoshida's or teriyaki sauce; mix well. Reserve 2-4 tablespoons of the marinade in a small - covered bowl and store in refrigerator. Rinse and clean your chicken and cut off any fat. Make sure you wash your hands when you are finished handling the chicken. Add chicken to the bag and turn to coat, I leave a couple halves of the limes in the marinade. Seal bag and refrigerate for at least 6 - 8 hours. Remove chicken from bag and throw out the marinade. Grill chicken on an outdoor grill over medium heat for 5- 8 minutes per side or until cooked and the juices run clear. Baste each side of chicken with reserved marinade during the last minute of cooking. Add the chicken to a serving plate and cover with foil and allow to rest for 5 minutes. Serve immediately. Red, White & Blue Skillet Cobbler If you're looking for something sweet to round off your 4th of July meal this grilled skillet cobbler is sure to please. Prep time: 15 MinCook time: 25 MinTotal time: 40 Min Ingredients 1 1/2 - cups fresh blueberries 1 1/2 - cups fresh strawberries, hulled and quartered 1/2 - cup sugar 1/4 - cup flaked, sweetened coconut 1 - teaspoon vanilla extract 1 - lemon - used for the juice, plus zest 1 - tablespoon butter or coconut oil 1 - box Jiffy golden yellow cake mix 1 - egg 1/2 - cup water 10 1/2 inch cast iron skillet Instructions In a large bowl combine the blueberries, strawberries, coconut (I omitted the coconut because my son doesn't like coconut), lemon juice, lemon zest, sugar and vanilla. Let the berry mixture rest for at least 10 minutes. Meanwhile, mix the batter with the egg and the water. Next, make sure you grill or oven is preheated to 350 degrees. If cooking on a grill create a indirect zone putting the charcoal to one side for baking the cobbler. Direct = cooking on top of the coals, indirect = cooking on the other side where there are no coals. Coat the cast iron skillet with one tablespoon of butter or coconut oil, so the cobbler does not stick. Add the berry mixture. Next, add the batter. Stir the berry mixture and batter with a spoon a few times so some of the berries make it to the top. Bake on the grill or in the oven for 25 minutes or until the fruit is bubbly and the cake has turned a golden color. Let cool 5 minutes then serve warm with ice cream or whipping cream. Terry's Potato Salad Prep time: 15 MinCook time: 20 MinInactive time: 2 HourTotal time: 2 H & 35 M Ingredients 6 - 7 potatoes, cooked, peeled and diced 2 - boiled eggs, chopped 1/4 - cup onion, chopped 1- 2 tablespoons pickle relish (start with one tablespoon) 1 1/2 - teaspoon vinegar 3/4 - 1 cup miracle whip 1 - tablespoon mustard salt and pepper, to taste Instructions Boil potatoes whole and let cool about 6-7 potatoes. When cool enough to handle peel off the skin and chop into bite size pieces. Add chopped onion, chopped eggs, salt, pepper, sweet relish and the vinegar and gently mix to combine. In a small bowl add the miracle whip and the mustard and mix to combine. Start with 3/4 cup of miracle whip and add more if needed after tasting the dressing. Add to the potato mixture and gently mix to combine. Cover at least 2 hours before serving. Notes I boil the potatoes whole with the skin still on. Grilled Corn on the Cob
Grilled Corn on the Cob fresh corn on the cob Butter Pepper & Lawrys Season Salt or Paula Deen House Seasoning Heavy duty aluminum foil Preheat your grill. Carefully peel back corn husks to within 1 in. of bottoms; remove all the silks. Spread butter mixture over corn. I use a pastry brush. Sprinkle with whatever seasoning you want, Lawrys seasoning salt, regular salt and pepper or Paula's House Seasoning. Re wrap corn in husks and place each corn cob in a separate piece of heavy duty aluminum foil and roll up. Grill the corn, covered, over medium heat for 25-30 minutes or until tender, turning occasionally. Peel back husks and remove corn add more butter and seasoning salt and serve. Cook's Note: You can also soak the corn in pot of cold water for 20 minutes before grilling. Then just leave the corn in the husks and grill. When done peel back the husks and remove the silk. OVEN METHOD: Preheat oven to 300¨H. Place the sliced onion and chopped garlic in the bottom of a large dutch oven. Pour in braising liquid. Unwrap pork and cut into 3 pieces. Place in dutch oven, cover, and cook for 3 hours. Remove the lid and cook for 1.5-2 hours. Transfer pork to a large bowl to cool slightly then shred into bite sized pieces, discarding some of the excess fat. Let braising liquid settle for 5 minutes then remove fat from surface with a spoon. Toss the shredded pork with 1 cup of braising liquid; adding more as needed to keep the meat moist. Notes STORAGE: Cooked meat can be stored in the refrigerator for up to 5 days. FREEZER FRIENDLY: Place cooled meat in a freezer safe container and freeze for up to 3 months. Using a stand mixer or hand mixer beat the whipping cream, powdered sugar and vanilla until stiff peaks form. Remove cake from refrigerator and spread with whipped cream. Strawberry Rose Sangria Course: Beverage Prep Time: 10minutes minutes Chilling time: 2hours hours ¿ªÔÆÌåÓýs: 6 Author: Countryside Cravings Strawberry Rose Sangria -is a perfect drink for a party! It's refreshing, easy to make, not too sweet, and filled with fresh strawberries and oranges. Ingredients 1 pound (454g) strawberries, sliced 2 cara cara oranges, sliced 1 (750ml) bottle rose wine 1/2 cup (120ml) brandy 1 (12oz) (355ml) can ginger ale or lemon lime soda Instructions Add the strawberries and oranges to the bottom of a large pitcher. Pour wine and brandy over the top and stir to combine. Place in the refrigerator for up to 2 hours to marinate. Before serving pour in the ginger ale. Serve in a glass with ice and the fruit. Notes You can use a dry rose wine, or even change it up and use a rose champagne and leave out the soda. I used cara cara oranges in this sangria but regular oranges will work fine too. I just like how pretty they are and they are a little sweeter. As with any sangria, you will need to allow a few hours for this to sit and "marinate". This allows for the fruit to flavor the drink and makes it extra tasty. This will become more pink in color after it sits. I know it looks a little orange in this picture (because it was a fresh batch) but I promise it will be pink/light red from the strawberries after it sits for a little bit. If this is not sweet enough for you feel free to add some sugar. Just stir well to dissolve before adding the fruit.
