INGREDIENTS

6 large eggs
6 slices cheddar cheese or your preferred cheese
6 slices cooked bacon, sausage patties or ham
1/4 cup milk or cream
Salt and pepper, to taste
1 tablespoon butter or oil for cooking
Optional: baby spinach, cooked mushroom or sliced tomato

1. Prepare the Eggs

In a mixing bowl, whisk together eggs, milk, salt and pepper.
Heat butter or oil in a nonstick skillet over medium-low heat. Pour in egg mixture, and scramble gently until just set. Divide the cooked eggs in six portions.

2. Assemble the Sandwiches

Lay the croissant bottoms out on a flat surface.
Layer each with a portion of scrambled eggs, a slice of cheese and your choice of breakfast meat.
Add optional extras, like spinach or tomato, then place the croissant tops on.

3. Wrap, and Freeze

Wrap each sandwich tightly in aluminum foil or parchment paper.
Place wrapped sandwiches in a freezer-safe zip top bag or airtight container.
Label with the date, and freeze for up to two months.

4. To Reheat

From frozen (oven): Unwrap, place on a baking sheet and bake at 375¡ãF (190¡ãC) for 20 to 25 minutes until heated through.

From frozen (microwave): Unwrap, and wrap in a damp paper towel. Microwave on 50% power for 1-1/2 to 2 minutes, then full power for 30 seconds to 1 minute.
