1. Prepare the Creamy Sauce: In a medium bowl, mix together the sour cream, green enchilada sauce, and diced green chilies until well combined. Set aside.
2. Cook the Filling: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 4-5 minutes.
