1/2 cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract

INSTRUCTIONS

1. Preheat the Oven
Preheat your oven to 350¡ãF (175¡ãC) and line a 12-cup muffin tin with paper liners.
2. Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg and ginger. Set aside.
3. Combine Wet Ingredients
In a large bowl, mix the vegetable oil and granulated sugar until well-combined. Add the eggs one at a time, beating well after each addition. Stir in the pumpkin puree and vanilla extract until smooth.
4. Combine Mixture
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.
5. Fill Muffin Tin
Divide the batter evenly among the lined muffin cups, filling each about two-thirds full.
6. Bake
