Cool and creamy, my Classic Pineapple Fluff has been a summer family favorite since I was a little girl.? It's the perfect dessert for summer, a BBQ, or just because you love pineapple!

Ingredients
16 ounces Shamrock Farms cottage cheese
2 3-ounce boxes pineapple gelatin mix
16 ounces frozen whipped topping, thawed
1 20-ounce can crushed pineapple, well drained
2 cups?mini marshmallows
3/4 cup chopped pecans
Instructions
In a large bowl, puree cottage cheese with an immersion blender (or use a food processor) until smooth.
Add in dry pineapple gelatin mixes until thoroughly incorporated. Then use a rubber spatula to fold in the whipped topping until no streaks remain.
Gently fold in crushed pineapple, mini marshmallows, and pecans.
Cover and refrigerate for at least 2 hours. If desired, serve topped with fresh pineapple slices, chopped nuts and a cherry.
