Awesome Apple Bread by Herbie

Ingredients:

1 cup vegetable oil

3 eggs

2 cups sugar

1 teaspoon vanilla

3 cups diced apples

3 cups all-purpose flour

1 teaspoon ground cinnamon

1 teaspoon baking soda

1 teaspoon salt

1 cup chopped nuts, optional

Directions:

Preheat oven to 325.

In bowl, combine oil, eggs, sugar and vanilla, set aside.

In another bowl, sift together flour, cinnamon, baking soda and salt.

Gradually add to oil mixture.

Add apples and nuts.

Pour into two 9x5 inch loaf pans.

Bake for 70 minutes.

Cool in pans for 10 minutes.

Sprinkle with sugar, if desired.
