TURKEY STUFFED PORTOBELLO MUSHROOMS WITH FETA, SPINACH & PECAN SALAD

INGREDIENTS

?

For the Stuffed Mushrooms:

?

4 large portobello mushrooms, stems and gills removed

?

1 tablespoon olive oil

?

1/2 pound ground turkey

?

1/2 small onion, diced

?

2 cloves garlic, minced

?

1/4 teaspoon ground black pepper

?

1/4 teaspoon crushed red pepper flakes (optional)

?

1/2 teaspoon dried thyme

?

2 tablespoons chopped fresh parsley

?

1/2 cup whole-wheat panko breadcrumbs

?

1/4 cup crumbled reduced-fat feta cheese

?

For the Spinach & Pecan Salad:

?

3 cups baby spinach

?

1/4 cup chopped pecans

?

1/4 cup crumbled reduced-fat feta cheese

?

1 tablespoon olive oil

?

1 tablespoon balsamic vinegar

?

?

DIRECTIONS

?

Preheat oven to 375¡ãF.

?

Lightly brush mushroom caps with olive oil. Place them gill-side up on a baking sheet lined with parchment paper. Roast for 10 minutes.

?

While mushrooms roast, heat 1 tablespoon olive oil in a skillet over medium heat. Add ground turkey and cook until browned, breaking it up as it cooks.

?

Add onion and garlic. Saut¨¦ for 2¨C3 minutes until onions are translucent.

?

Stir in black pepper, red pepper flakes (if using), thyme, and parsley. Cook for another minute, then remove from heat.

?

Add panko breadcrumbs and feta cheese to the turkey mixture. Stir until combined.

?

Remove mushrooms from oven. Drain any liquid from caps. Spoon turkey mixture evenly into each cap.

?

Return stuffed mushrooms to the oven and bake for another 10¨C12 minutes until heated through and tops are golden.

?

Meanwhile, prepare the salad: In a medium bowl, toss spinach, pecans, and feta. Drizzle with olive oil and balsamic vinegar. Toss to combine.

?

Serve two stuffed mushrooms per person with half the salad on the side.
