Wow! I never thought there would be such a big response to my question!

Thanks for all the replies, and it seems that there are plenty of quite acceptable pronunciations. B. I. T. X. seems a bit formal to me, Bittex now sounds like that stuff they put in liquids to stop people drinking them, so I'm going with By Tex from now on.
