You should start each winding at the same end of the binocular core. I've seen this mentioned in the instructions for the KD1JV QRP wattmeter, which also uses a binocular core. If you look at the schematic for the ATU-100, there is a photo at the bottom left hand corner which seems to agree with Steve's guidance.
Try not to overlap any turns.
