The text formatting is probably dependent on the settings of your e-mail composer. For instance, I use Mozilla Thunderbird, and in the settings for Composition, I can control whether it's HTML, plain text, etc. In my settings, I have it automatically send according to what is in the message I'm reply to. My default is a simple variable width font, medium size HTML.
