Look in your slicer for a way to turn the top and bottom layers off.
In Cura, look under Shell. Set Top Layers and Bottom Layers = 0.
Let it reslice, then click on Preview. You should see the infill clearly exposed. You might want to experiment with different infill patterns to get a grid you like. You'll see the results in preview as you make changes.
BTW, the models come into Cura on edge. They need to be printed with with the top surface of the case down. If you try to print it on edge, turning off the top/bottom layers will leave those sides with exposed infill. That isn't what you want. Not to mention other printing ills from overhangs from printing it on edge like that.
Ender 3 is tremendous bang for the buck. The mechanics are all there, but the slicer is more than half the trick to getting the results you want.
