John, you have to make the thumb drive bootable for that to work. Instructions abound on the googles, but one is here:

Lee,
I¡¯m getting so tired of all this, I¡¯m sure you are also.
When I followed your instructions there was no wording, no recovery assistant anywhere. I had to go get a wired keyboard and mouse as the wireless would not connect fast enough to boot with the ?-R, once done I would boot correctly but there was no option do as the rest of your instructions. I am running Sierra as I¡¯ve needed to keep my machines on a 32 bit system do to one program.
While going through all the items on the drive I did find <Screen Shot 2023-06-09 at 12.53.15 PM.png>
I was going to install this on a thumb drive and try to boot from that devise which would allow me to then wipe the main drive clean, but when I tried to copy the Sierra app to the drive I get this:
<Screen Shot 2023-06-09 at 12.43.35 PM.png>
The App is just shy of 5 gig, I¡¯m using a 128 gig drive..
I guess if this doesn¡¯t work I¡¯ll have to take it to Apple and have them wipe it and install but they only do a one pass wipe and the type folks that might purchase this box may well have the expertise to retrieve info. with just one pass.
I¡¯m so sorry to keep bothering you, nothing about this transition has been easy.
Thanks so much.

I spent some time thinking about this and I think your safest bet is to now overwrite the current installation of MacOS on the system volume. The problem you run into with a normal installation is that the usual install methods will want to maintain the status quo. So, Internet recovery is probably the easiest way to get around this.
You can do an Internet recovery without supplying a password, so all the personal information is lost and your data will remain encrypted¡ªjust pure random garbage without a recovery key.
To do this
(1) Bong the Mac.
(2) Hold down ?-R until you see the ?. This will get you into recovery mode.
(3) Don¡¯t type a password on the login screen. Choose the recovery assistant (top left???).
(4) Choose the erase option and erase the current MacOS.
(5) Rebong the Mac and go into recovery mode again.
(6) Do a net install of the default MacOS.
There are slicker ways of doing this with the command line, but this seems to be the most straightforward and it will leave behind nothing recognizable.
