It would seem that Ubuntu has a Default Application (Evince), and (somewhere) a list of Recommended Applications. Gimp is at the top of the list of Recommended Applications for PDFs. Recommended Applications appear in the right-click Open With submenu, so represent a list of alternatives to the Default Application. I've given up trying to figure out how to edit the Recommended Applications list (on account of not being able to figure out where it is saved), and elected to change the kicad PDF viewer to be, specifically, Evince. I don't really like that, as it wont change if the Default Application changes, but at least it works, for now. Mutter mutter.

If none on that works, then you will need to poke about in the file
associations and tweak the order of viewer preferences pushing gimp down
to the bottom, and making sure that your system pdf program is in the list
somewhere near the top.
Sorry I've no idea as to where that setting is on Ubuntu, I use SUSE and
KDE where it's in:
settings > configure desktop > applications > file associations > (expand
application tree) to find pdf.
