Yeah, I have a blue box upper left of the slip when I go into
edit mode (and I have to zoom in to see the slip in amongst all
the other track segments
But what do I click on to bring up the Edit Slip window? Anywhere
I click seems to just animate the turnout(s) - and right-clicking
seems to think everything is "Mainline"

I assume that you rotated the double slip image so that the
magenta/blue connection box is now upper left.
Use the edit dialog to change the turnouts.
Make the top row Thrown and the third row Closed.
