(mumbles) are often called "tabs", particularly in Microsoft and Apple documentation. This probably comes from often being rendered by those platforms like the paper tabs usually attached to the top of real paper sheets and/or folders in a filing cabinet.
The term "sheet" may come from the filing cabinet analogy, or from the term "worksheet" used in Microsoft Excel.
There may be official terminology guidelines but I haven't seen them.
