For everyday operation, I generally run 400 Hz. It provides good selectivity without sounding too harsh. In contests, or when operating a DXpedition with my 7000, I will often narrow it down to 200 Hz or so, to be able to pull out a single signal from the pileup. On other radios (e.g., my IC-7600) I will also engage the Audio Passband Filters (a second set of filters in the audio chain, beyond the regular filters in the IF) to really clean things up.
If you are operating totally "in the clear," i.e., no nearby signals and good signal strength, you can open the filter up to 1 KHz or so and it will have a more "natural" sound, to most people's ears.
