We always leave the tip on, it does dry up and then you need to change it, but it takes weeks or months in the fridge.
Usually you can still dispense the somewhat dried paste out of the tip and discard it before you start.
Some paste dries a lot faster than other, I found the Chipquick product to store well. It says it can even store at room temperature, but we still put it in the fridge.
Another thing I found is that those dispensing needles add a lot of friction, you need much less pressure if you cut them as short as possible with a dremel or something.
