As another hobbyist, I use a dado stack. I do not use it often, and so the set-up is not particularly onerous.
I use a dial adjusting Freud model, so I do not have to fiddle with shims to tune the width.
I probably use it more for tenon cheeks than for actual dados. It works quite well.
