I was unaware that thatch was still a thing. I looked up imaged of thatched roofs for Norfolk UK and yep that's what it is.
So I did some surfing and reading I'm impresses 20 - 30 years life span and 7 for the ridge? Wow. In the UK where it rains about 690 days a year?
They are more than a foot thick? I'm thinking Fire.

It will be thatch, which is done with reeds. Norfolk in the UK used to be reputed as the best thatch available in the UK. Put on by a "Thatcher" which is a dying art but still pretty strong in the UK. Thatchers would usually leave their trademark on any job they done which in a lot of cases would be a small bird or animal made out of thatch and left somewhere on the roof.
