This is speculation from what I remember about restaurant tables, but I would want to take a look at rigidity. The sheet metal top is not that thick and it lays over some sub-structure. Those tables can hold a lot of weight, but are they designed to resist twisting? It seems to me that cutting forces could induce some bed twist that would be transferred to the table that the table could not resist. My expectation would be an increased risk of chatter.

The table could be strengthened from underneath in the event it becomes an issue.

What a super idea to use a stainless steel, commercial table like that to put a machine on. I hope you make a lot of chips and have a good experience with your new machine.
