As far as hardware goes: perhaps ?a Bluetooth midi dongle ( sounds Australian right?) with a smartphone and a BlueBoard wireless foot switch. ?

Could copy the midi controller data from the very thorough Novation Zero XL ?template. ?As far as I recall it provides a full set of mutes.
