generally sound a fair bit better, have a lot more diversity in the kinds of sounds they can make, and can sound a lot cleaner. 4op sounds are often "dirtier" or "grungier"--good in some situations, not in most. 6 op synths can also sound dirty, but they also can sound a lot more pristine. Note--you don't have to use all 6 operators on a 6-op FM synth. So, you can theoretically recreate most 4-op sounds on a 6-op synth--with some know how and tinkering.
