I think you should check the contrast setting. Maybe there is a short or other fault. As you adjust the contrast potentiometer, can you see the voltage at the LCD's contrast pin change, between 0V (one end) and 5V (the other end)? With the chip installed, at one end of the contrast pot you should see all black blocks; at the other end, no black blocks. At some point (quite sensitive) you should be able to see text.?
