I very much look forward to seeing a pack from Lab599 or DIY599. Today I use 3S1P 5Ah Telsa Gen 3 21700 pack I build after I snagged 50 of the cells from a company out in CA over 2 years ago. I can run 4 hours of digital work at 8w TX while powering a Raspberry PI. Yes LifePo4 cells are inherently more safe than LiPo, you do need to keep such in mind and care for the packs. It's hard to beat the energy density of the LiPo. Here is my LiPo 5Ah on the left and a LifePo4 3Ah on the right.? Can you imagine a pack like Lab599 plans, but with 21700 5Ah cells? You could run a few days!
