Unfortunately, the email signature in the message body itself is just
one indication of the device you're using; changing it doesn't change
the others.
For example, in that message you sent, the MIME part boundary was
"--_com.samsung.android.email_11545092392523990". So I'm going to
venture a guess that if I were a bad actor who wanted to send you
targeted malware to exploit a known flaw in your device... I'd pull out
something for a Samsung device running Android.
But I'd never do that to you :-)
