I never unsubscribed from this list yet I received 2 emails that I was
being removed because I deleted some mail that was in my spam folder.

If the member did in fact delete group messages while they were in his/her spam folder then the unsubscription is normal.

The answer is to always remove group messages from your spam folder if they are delivered there, and never put them there.

Why would this be part of the list software?

Because the member's email service demanded it be so. They told Groups.io that the member had marked a list message as spam, and they expect Groups.io to stop sending messages to that address.

It is unfortunate that some email services treat deletion from the spam folder as equivalent to marking it as spam. Particularly unfortunate when both the delivery to the spam folder, and the eventual deletion from it may be done by the email service without any action by the member.
