Some of the invitees who have joined (possibly not through the
invitation process but separately via web or subscription email) are
still showing up as "invited" instead of "accepted".

If they joined the group by other means then that makes sense: they didn't actually accept the invitation.

Where can I suggest that when the IT people get some time there could
be a process to check if when someone subscribes that their email
address is matched to an invited email address so that this
information is updated.

You could suggest that the status change to "joined", to keep that case distinct from "accepted".
