Then from pubmed article on goat cheese sulfur:
Sulphur contents of fermented products were significantly greater than those of fluid milk, which may be accountable for the microbial synthesis of sulfur containing proteins during the manufacturing processes of the products.?

Per Sandra Olson's explanation in her You Tube Budwig Recipe video: Flax seed oil is a highly unsaturated oil and has many essential fatty acids taht help to protect our cells. An important part of this recipe is the bonding of the flax seed oil and the cottage cheese. The sulpher protein components in the cottage cheese make it water soluable and helps carry it into the cells where it is needed.

The goat cheese may very well have high sulpher content as well, I'll be checking in to that.

I have been using goat cheese to make the Budwig mix. ?I mix 3 TBS of flax oil into 3-4 ounces of goat cheese with a couple drops of lime & coconut or orange & vanilla essential oils and extracts plus some stevia. ?It turns into a beautiful, fluffy delicious whipped dessert. ?I am hoping this is an approved way to make the recipe because I don¡¯t like cottage cheese. ?I cannot find anyone using goat cheese in any of the posts. ?Three ounces of goat cheese has fifteen grams of protein. ?The flax oil disappears completely when mixed with the goat cheese.
