I have a Vitamix and had just started blending cashew into salad dressing. But it's not heavy in calories since a 1/3 cup of nuts would yield a 12 oz bottle of dressing. And there is lemon juice and apple cider vinegar in it.

Nuts have a good amount of calories as well as protein so if you have a food processor perhaps you could make your own "nut butter" and spread on Eziekel bread, provided she can eat it?

dinner is a small bowel if multi grain rice with a bit of cooked veggies. She adds a bit if olelux and pumpkin seeds.
