As green crabs continue to wreak havoc on New England fisheries, one fisherman is tackling the challenge head-on ¡ª , with hopes of turning the resilient crustacean into table fare. ¡°You can¡¯t kill these things. I mean, we¡¯ve heard stories of them coming back from a frozen state and crawling around restaurants,¡± Jeff Ladd, the ambitious fisherman in question, told CBS News. ? His aim is to help restore habitats that would otherwise be destroyed by the crabs, which consume native crabs, clams, and young lobsters. Combine warming waters with few natural predators and there¡¯s little keeping the species in check. That¡¯s where Ladd comes in: On a good day, he can catch about 2,000 pounds of green crab. ? After he catches them, the next step is to turn the crab into tasty cuisine (that mostly looks like seafood broth right now). Last year, Sharon St. Ours, whose family has been in the seafood industry for over four decades, turned 5,000 pounds of crab into 1,000 gallons of broth for commercial kitchens. ? ¡°The idea here is to get some restaurants to use it, or some food manufacturing companies to use it as a flavoring in order to utilize a lot of them, and then and bring more money to the fisheries,¡± said St. Ours. She added: ¡°It definitely has a delicious flavor.¡±
