1. Preheat the oven: Preheat your oven to 375¡ãF (190¡ãC) and line a baking sheet with parchment paper.
2. Prepare the filling: In a medium skillet, saut¨¦ the fresh spinach with garlic until wilted (skip this step if using frozen spinach). Let the spinach
cool, then chop it finely. In a bowl, combine the chopped spinach, ricotta, feta, beaten egg, nutmeg, salt, and pepper. Mix until well combined.
3. Prepare the phyllo dough: Lay out one sheet of phyllo dough on a clean surface and brush it lightly with olive oil (or butter for extra crispness).
Place another sheet on top and brush it again. Cut the layered phyllo into long strips, about 2-3 inches wide.
4. Fill and fold: Place a spoonful of the spinach and cheese mixture at the bottom of each phyllo strip. Fold the dough over the filling to form a triangle,
then continue folding in a triangular shape (like folding a flag) until you reach the end of the strip. Repeat with the remaining phyllo sheets and filling.
5. Bake: Place the triangles on the prepared baking sheet and brush the tops with more olive oil or melted butter. Bake for 20¨C25 minutes, or until golden
brown and crisp.
6. Serve: Serve warm as an appetizer, snack, or alongside a salad for a light meal.
