1/2 lb pork tenderloin or pork chops, diced
2 tablespoons soy sauce, divided
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
1 teaspoon sesame oil
3 tablespoons vegetable oil, divided
3 cloves garlic, minced
1 small onion, finely chopped
1 cup frozen peas and carrots, thawed
2 eggs, lightly beaten
3 green onions, sliced
Salt and pepper to taste
Fresh cilantro or parsley for garnish (optional)

1. Prepare the Pork

In a small bowl, marinate the diced pork with 1 tablespoon of soy sauce for about 10 minutes.

2. Cook the Pork

Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork, and cook for 3 to 4 minutes or until browned and cooked through. Remove from the skillet, and set aside.

In the same skillet, add another tablespoon of vegetable oil. Pour in the beaten eggs, and scramble until fully cooked. Remove from the skillet, and set aside with the cooked pork.

4. Saute the Vegetables

Add the remaining tablespoon of vegetable oil to the skillet. Add the minced garlic and chopped onion, and saute for about 2 minutes until the onion is translucent and fragrant.
Add the thawed peas and carrots to the skillet, stirring to combine.

5. Add the Rice and Sauce

Add the cooked rice to the skillet, breaking up any clumps. Stir in the remaining 1 tablespoon soy sauce, oyster sauce, hoisin sauce and sesame oil. Mix well to ensure the rice is evenly coated with sauce.

Return the cooked pork and scrambled eggs to the skillet. Add the sliced green onion, and stir everything together until well-combined and heated through. Season with salt and pepper to taste.
