1. Cook the Macaroni
Bring a large pot of salted water to a boil, and cook the macaroni, according to the package instructions until al dente, about 7 to 8 minutes. Drain, and set aside.
2. Make cheese sauce
In a large saucepan, melt the butter over medium heat. Add the diced onion, and cook until softened and translucent, about 3 to 4 minutes. Add the garlic, and cook for another 30 seconds until fragrant.
3. Create the Creamy Base
Stir in the milk and heavy cream, then bring to a simmer, whisking occasionally to combine. Once simmering, reduce the heat to low, and whisk in the Dijon mustard, salt, pepper and paprika. Gradually add the shredded cheddar, mozzarella and Parmesan cheese, stirring until the cheese is completely melted, and the sauce is smooth and creamy.
4. Combine Pasta and Sauce
Add the cooked macaroni to the sauce and stir until the pasta is fully coated in the cheese sauce.
5. Assemble the Casserole
