1. Prepare the chicken
Place the chicken breast in between two sheets of plastic wrap, and pound it to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
2. Set up the breading station
Place the flour in a shallow dish. In another shallow dish, whisk together the eggs and water. In a third dish, combine the bread crumbs, grated Romano cheese and garlic powder.
3. Bread the chicken
Dredge each chicken breast in the flour, shaking off any excess. Dip in the egg mixture, then coat with the bread crumb and cheese mixture, pressing gently to adhere.
4. Cook the chicken
In a large skillet, heat the olive oil over medium-high heat. Add the breaded chicken breast, and cook for 4 to 5 minutes a side or until golden brown and cooked through. Remove the chicken from the skillet, and set aside.
5. Make lemon sauce
In the same skillet, add the butter, chicken broth and lemon juice. Cook over medium heat, scraping up any browned bits from the bottom of the pan. Simmer for 3 to 4 minutes or until the sauce is slightly reduced.
